STUFFING


Mary's Fruit Stuffing
For Duck


2cupstoasted or untoasted bread cubes
1/2cuporange sections, chopped
1/2cupapple, chopped
1/4cuplight raisins
1/4cuppecans, chopped coarsely
1/2teaspoonsalt
1/4teaspoonground nutmeg
4-5lbduck

Combine ingredients. Lightly stuff duck or other fowl.

I sometimes make the apple and orange sections larger to increase their separate taste in the dish. For nutmeg I prefer freshly ground, so I keep whole nutmegs in their dedicated, small coffee grinder.
