In a food processor, process 1 cup of peanuts, 3 cloves of garlic.
Put the processed mixture into a bowl, and add 2 tablespoons of fish sauce (or to taste),
the juice of 2 limes (or to taste), 2 tablespoons of sugar (or to taste).
Add enough water to make it a little soupy, but not too thin.
To make the Thai Taco: Take a whole leaf of romaine, lay a small amount of the noodles in it, top with fish if wanted. Then add some lettuce, bean sprouts, cilantro, mint and basil. Spoon lots of peanut sauce over it, roll like a taco --- and eat! The burst of taste between the peanut sauce, herbs and lettuce... combined with the texture of the noodles is heavenly! |
