Mary's Carrot Cake
and Frosting


1 1/2cupsoil
2cupssugar
4.eggs
2cupsflour
1teaspooncinnamon
1teaspoonsoda
1teaspoonbaking powder
1/2teaspoonsalt
2cupsgrated raw carrot
Cake:
Beat oil and sugar, add eggs, dry ingredients, and carrots.

Bake in two 9" round pans at 375 degrees for almost 25 minutes.

1/2cupbutter
1cupconfectioner's sugar
8ozcream cheese
1teaspoonvanilla
3/4cupnuts

Frosting:
Cream butter, sugar and cream cheese. Add vanilla.

Use nuts for decoration.
